Remplir une plaque de 12 muffins de taille standard avec des caissettes en papier.
Faire fondre le beurre, le chocolat et le cacao dans une petite casserole à feu doux, en fouettant régulièrement jusqu'à ce que le mélange soit homogène, puis laisser tiédir.
Gratter la gousse de vanille pour récupérer les petites graines à l'intérieur.
Mélanger la farine et la levure. Fouetter les oeufs, ajouter le sucre, la vanille et le sel, puis battre jusqu'à complète incorporation. Ajouter alors le mélange chocolaté et l'incorporer correctement. Ajouter la crème et fouetter, puis le mélange de farine, et fouetter de nouveau jusqu'à ce que le mélange soit homogène.
Répartir la pâte dans les caissettes jusqu'à mi-hauteur, puis enfourner pour 18 à 20 min. Vérifier la cuisson du muffin : planter la pointe d'un couteau dedans, si elle ressort propre, il est cuit.
Laisser les gâteaux refroidir dans les moules placés sur une grille pendant 15 min au moins, puis retirer les caissettes délicatement et laisser complètement refroidir sur la grille.
Quand les cupcakes sont à température ambiante, procéder au glaçage.
Le glaçage : faire fondre le chocolat au bain-marie, ajouter le beurre et bien mélanger. Répartir la sauce chocolat sur les cupcakes et l'étaler à l'aide d'une spatule, en en laissant un peu plus au centre pour obtenir un gâteau bombé. Décorer chaque cupcake d'une fraise.

[bio] => La créativité de Philippe, la justesse de ses gestes en font l'un des chefs les plus talentueux de sa génération. C'est donc logiquement qu'après avoir quitté sa Lorraine natale, il intègre les brigades des meilleurs restaurants et rafle les prix de prestigieux concours (Chef espoir de l'année 2001, Trophée national de cuisine et pâtisserie 2003). Sa grande qualité est, que malgré tout cela, il ne se prend jamais au sérieux et aime plus que tout vous faire partager ses tours de mains et ses dernières créations.
[parcours] => Avant de rejoindre l'atelier, je suis passé par l'île de Porquerolles pour démarrer mon métier. Puis une maison bourgeoise près de Callas dans le Var et ensuite La Lorraine pour codiriger un restaurant/bistro. Je suis ensuite venu à Paris, chez « Lasserre » dans un premier temps (moins d'un an) puis « le Ritz » pendant 4 ans. Cela m'a permis de participer à quelques concours que j'ai remportés: « Espoir de l'année » et « Trophée National de Cuisine et de Pâtisserie ».

il s'agit bien de 100 g de crème épaisse. Il est normal que votre appareil soit épais mais en ce qui concerne le chocolat, vous pouvez utiliser un chocolat noir moins fort pour ne pas ajouter de sucre.
